To make it look like rotting bananas on my counter is intentional, I turn them into things like these delicious Vegan Peanut Butter Banana Brownies! These are so easy to make my 6 year-old son can whip up a batch in just a few minutes! I confirm correct measurements and put them in the oven, but other than that he sees them through from start to finish.
Ingredients:
- 2 Over Ripe Bananas
- 1 cup Sugar
- 1/2 cup Vegan Butter, Melted
- 1 tsp Vanilla Extract
- 3/4 cup Flour
- 1/8 tsp Salt
- 1/4 cup Cocoa Powder
- 1/2 cup Creamy Peanut Butter
Instructions:
- Preheat oven to 350 degrees.
- In a bowl, use a fork to mash the bananas. Add the sugar, 1/2 cup of melted butter, and vanilla. Whisk until combined.
- Add the flour, salt, and cocoa powder. Whisk until well combined.
- Pour batter into greased 9 x 9 pan.
- Use a spoon to add dollops (about 1/2 cup) of peanut butter on top of the batter. Using a butter knife, swirl the peanut butter into the brownie batter.
- Optional: I like to drizzle additional melted peanut butter on the top of the brownies before baking. Then lightly swirl into the top of the batter. It gives them a nice thin layer of peanut butter, like pictured!
- Bake for 25-30 minutes, or until the center no longer jiggles when you shake the pan.
- Allow bars to cool completely before cutting.
