Greek Gigantes Beans

Greek Gigantes are, not surprisingly, GIANT beans! In this recipe, the gigantes are slow cooked in a rich tomato sauce until perfectly creamy and tender. Serve over toasted crusty bread for an easy vegetarian meal!

You’ll Need:

  • 1 pound dry gigantes beans, soaked overnight
  • 2 medium yellow onions, peeled and chopped
  • 4 cloves garlic, peeled and smashed
  • 2 (14.5-ounce) cans no-salt-added diced tomatoes
  • 2 cups vegetarian chicken broth (or water)
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 tablespoons extra virgin olive oil
  • Crusty bread, black pepper, and more olive oil for serving


  1. Place all of the ingredients in the bowl of a large slow cooker.
  2. Cook for 4-6 hours on high, or 8-10 hours on low.
  3. Taste and add more salt as needed.
